Instructions
  1. Wash carrots and chop into medium sized pieces. Add to pot with the quart of chicken stock and bring to a boil. Simmer for 25 minutes or until the carrots are soft.
  2. Drain the carrots, saving the remaining chicken broth for a snack or to incorporate into another recipe.
  3. To the carrots, add the lemon juice, eggs, salt, cinnamon, coconut flour, vanilla extract, minced onion, and coconut oil (optional).
  4. Blend together with an immersion blender.
  5. Pour the mixture into an ungreased glass casserole dish.
  6. Bake in the oven at 350° for 60 minutes or until firm to the touch. Enjoy hot, warm, or cold!
