Jalapeno peppers and tomatillos

Now that the tomatillos are coming in, the question remains: What exactly do you do with tomatillos? We tried chopping them up and adding them to quesadillas, which didn’t seem to add a lot of flavor. We have since found out that roasting them is the key to all the yummy flavor. This salsa recipe is super easy, fast, and delicious and has just the right amount of heat.

Instructions
  1. Chop the tomatillos, onion, garlic, and hot peppers. Place on a roasting pan and toss with olive oil. For less heat, use Anaheim hot peppers. For more, try serrano or even a cayenne.
  2. Heat the oven to broil, and roast the vegetables for about 5 minutes. They should be soft and slightly browned, but not burnt.
  3. Let cool and then blend in a food processor with salt until it reaches the desired consistency. Stir in the chopped cilantro and enjoy with some tortilla chips!
