One of our guilty pleasures is going to the local Mexican restaurant and getting quesadillas. We promised ourselves that next time we would make our own, but it just was not the same. Until now! Enter Recipe 2. This one is a winner and is just as good as going out to eat.
Cook the ground beef until it is no longer pink. Drain the grease.
Mix salsa, spices, and hot sauce with the beef in the skillet.
Lightly grease a baking sheet. Fill your tortilla with the beef mixture, beans, cheese, and some sliced onion. Fold over the tortilla or place another tortilla on top (depending on size) and bake in the oven at 475° for 10 minutes until golden brown and crispy.
For the guacamole, mix all of the ingredients together. The lemon juice helps to maintain the bright green avocado for little while, so you can make this a little ahead of time. Top the warm tortillas with the guacamole and enjoy!
