Making Mead

I didn’t consider making mead with honey from my bees till I read about it in The Art of Fermentation, which speculates that mead is likely the first alcoholic beverage enjoyed by humans.

What does mead taste like? Our mead at the Little House on Pine has subtle sweet, nutty hues that are almost buttery. Smoothly satisfying with a lighthearted twang, it is a refreshing compliment to meals or enjoyed as a treat on its own.

  1. Add one part raw honey to four parts water in a narrow-necked glass vessel. Shake vigorously and cover the lid with a clean dishcloth.

  2. Set on a warm counter and stir periodically during the first week. After a few days the blend will bubble and froth. Loosely cover with a clean cloth and agitate periodically.
  3. Loosely cap the vessel to enable it to breathe and set out of sight for three months. Mark your tasting date on the calendar.
  4. Three months later, taste the mead. Enjoy a glass like wine, and cap the vessel for ongoing storage.
