  1. Knead together all ingredients for about five minutes.
  2. Shape into a firm, smooth ball and let rest in a damp towel for 30 minutes.
  3. Divide the rested dough in half. Dust a cutting board with flour. Use a rolling pin to flatten half of the dough into a disc, about 1/8" thick.
  4. Dust the disc with flour and gently fold it twice in the same direction. Repeat for the second half.
  5. Carefully cut each folded dough sheet into thin strips. Sprinkle more flour on noodles if they stick together.
  6. Boil noodles in lightly salted water. 5 minutes will produce al dente noodles, or let them go a few minutes longer till they reach the desired softness. Serve with soup or veggies.
