Fermented Horseradish

An alternative to basic horseradish sauce with honey. As Wild Fermentation explains:

This approach involves the horseradish in both the fermentation that creates alcohol from honey, and the fermentation that creates vinegar from alcohol.

How cool! And delightful that I’m able to use backyard honey and horseradish—a 100% homegrown ferment! It tastes like traditional horseradish sauce with a sweet edge.
