  1. Peel carrots and slice into rounds.
  2. Cover with filtered water and bring to a boil. Add butter and honey.
  3. Boil uncovered, skimming frequently, till liquid is reduced to almost nothing and carrots are well coated.
  4. Add more butter at the end if desired, season with salt to taste.
