Cardamom delights make for excellent breakfast snacks.

Cardamom is one of the less common spices in our homestead, but I think it is quickly becoming one of our favorites. Cardamom has a subtle spicy, herbal, and citrusy flavor. It is used in middle eastern drinks, but is also a great compliment in cheeses and desserts. We are looking forward to incorporating the cardamom into the cheese recipes from David Asher’s book The Art of Natural Cheesemaking.

Ingredients

Instructions
  1. Combine dry ingredients in a large bowl and set aside.
  2. Lightly toast the pecans. Once toasted, place them in a food processor to mince.
  3. Add the minced pecans to the butter, egg, maple syrup, honey, olive oil, and extracts in a small bowl.
  4. Add the wet ingredients to the dry ingredients in the large bowl. A dough should start to form. It will be a little on the dry side, but you should be able to form a ball of dough without it falling apart. If the dough is too dry, add the milk and olive oil to help join it together.
  5. Bake at 350° for 14-15 minutes.
