Ok, here we go. I’m super excited about this one. It was wicked cold today, which means more time plotting in the warm kitchen. Buffalo chicken and melty cheese, um yes please! Wrapped in a homemade tortilla, that’s just too fantastic.
Buffalo chicken is just one of those dishes that is perfect for a get together with friends or a cold dreary day and offers a very satisfying combination of spice, crunch, and coolness.
This recipe also offers wonderful leftover options. Not only is a wrap a great way to use up that remaining half of an onion or that guacamole sitting in your refrigerator, but it also lends itself to ultimate nachos with homemade tortilla chips covered in chicken and cheese (maybe throw some scallions on there) and drizzle with yummy spicy deliciousness.

Buffalo Chicken Wraps
Surprisingly healthy, these wraps are satisfying with a kick.
Pour the milk into a wide bowl. Mix the flour, salt, and pepper in another wide bowl. This will be used for lightly breading the chicken.
Cut the chicken into strips. Coat the chicken strips in the milk and then dredge them in the flour mixture and place in a lightly oiled skillet.
Let the chicken cook until both sides are golden brown and the meat is white. When done, lightly dust with parmesan cheese. Set aside in a warm spot.
Now to make the sauce. In a bowl, whisk together the hot sauce and rice vinegar. Once combined, add the spices and honey, stir well.
In a small sauce pan, melt 2 tbsp. butter. Once melted, add in the sauce mixture. Simmer on low for 10 minutes, stirring occasionally. Turn off heat, and prepare for wrap assembly. As the sauce cools, it will start to separate so just give it a quick stir before using it.
