Basic Chia Pudding

The book Born to Run introduced me to the culinary wonder of chia seeds, a traditional superfood prized by the Mayans, Aztecs, and modern athletes.

Basic chia pudding stands on its own as a light breakfast, hunger-curbing snack, or healthy dessert. Power up with chia pudding variations substituting milk with kefir or yogurt. Try adding seasonal fruits, berries, and seeds.

The fun with chia doesn’t stop with pudding. I make chia banana bars, blend them into breads and cakes, and sprinkle them in smoothies. Once the pudding finishes, give it a good final stir before serving.
